Boulder Realtor Has Mixed Feelings About Pasquini’s Closing In Louisville


A downtown Louisville icon, Pasquini’s Restaurant, (formerly Colacci’s) is being replaced by another new restaurant. And this has one Boulder Realtor working to embrace inevitable change once again.

According to a recent article published by the Boulder County Business Report , the new establishment will be called The Empire Lounge. The Empire is due to open in mid-December.

The downtown Louisville area has been through many changes over the years including recent controversy over redevelopment of some local landmark buildings in fear of being razed. What was once a local favorite hardware store became no more several years ago and houses now, among other things, a coffee shop.

The Blue Parrot is still a local favorite and has managed to get their signature spaghetti sauce into retail store sales for quite a while now. Owned by the same connected, or dis-connected, family as the Blue Parrot, Colacci’s Restaurant closed years ago and became Pasquini’s. The well-known neon sign was reconfigured with the new name and the tradition will continue it seems as the story from the BCBR reports that Empire Lounge owner, Brendan McManus, will have the legendary sign reformatted to display the neon to reflect the new name at a projected cost of approximately $10,000.

With menu influences rooted in Denver’s Tante Louise, Vail’s Wildflower, Phoenix’s Phoenican and Las Vegas’ Caesar’s Palace, it should prove a tasty addition to the Louisville dining scene.

I’m sorry to lose another Louisville icon and I’ve had many good meals at Pasquini’s.

As Bob said “the times, they are a changin’ ” and with that said, I’m ready to give the Empire a try.
