Boulder Colorado Chipotle Sets Tone for Pizzeria Locale

The Boulder Colorado location of Denver-based Chipotle Mexican Grill has partnered with an outfit to launch a new casual pizza concept called Pizzeria Locale.

While the Boulder Pizzeria Locale location may be the inspiration for the new Pizzeria Locale, the Denver location intends to be less full-service and more “fast casual”.

The first fast casual Pizzeria Locale opening as a part of the partnership with Chipotle will be ready sometime in May, and they are already planning for the possibility of two more locations in the Denver area.

Pizzeria Locale’s menu includes 10 pizza choices as well as customer-created combinations from a selection of ingredients chosen by the customer in an interactive service line.

Chipotle partnered with Bobby Stuckey and Lachlan Mackinnon-Patterson, the founders of Boulder’s well-known stand out restaurant Frasca Food and Wine.

The original full service Pizzeria Locale in Boulder was created a couple of years ago by Stuckey and Mackinnon-Patterson who say that the first Pizzeria Locale was inspired by the traditional pizzerias in Naples, Italy.

By partnering with Chipotle, the idea is to bring the restaurant’s concept to the people… I’d take that to mean that their product becomes more affordable, hence the foray into Denver, and into locations where they may capture a similar time and money conscious client looking for a more healthy, tasty and affordable solution to their lunchtime needs.

Boulder’s Chipotle on Pearl in the Old West End Neighborhood doesn’t seem to get the higher level of traffic I’ve seen at the various other locations of their  operation, however it has been in place near other famous Boulder destinations like University Bikes, the West End Tavern, and Jax for many years now, so something must be working for them in that location.

For those of you who have been in town for more than a few years, you may remember the small house, and Nepalese restaurant that lived in this space prior to the redevelopment of this area.  I was reminded by someone today that this was also the original location of Pasta Jays. Unless I’m off by a block or so. It sure has been a while…
